Wildflowers Sugar Art Classes of Instruction A Professional Course of Study Gum paste flowers Rolled fondant Cake decorating techniques Cost for tuition $2,750.00 Early payment discounted tuition: $2,500.00 Six consecutive days of learning, creativity, and taking the art of sugar to new heights… 10 a.m. to 6 p.m. Day One · Introduction to gum paste Gum paste, your medium for creating edible beauty. · Wildflowers gum paste One of the biggest secrets for successful sugar art lies in your gum paste & its properties. I learned early in my career that all gum paste recipes are not created equal. Some widely used recipes are a recipe for disaster. You will receive Wildflowers proven gum paste recipe & learn how to make it & store it. This recipe has been a closely held proprietary secret for years and is perhaps the most crucial element in creating successful sugar art. · Properties of gum paste Understanding the properties of gum paste is crucial: Sculpting, drying, painting, & storing your completed pieces. · Creating bases for flowers Cones for roses, forms for French tulips, modified ‘Mexican hat’, stamens, centers for tulips, centers for Calla Lilies, centers for poppies, the pincushion flower center, wiring stamens. · Berries, Fruits, & Wild Things Berries, fruits, and other ‘wild’ elements add exponentially to a finished arrangement. Learn how to make berries and other wild things to add to your sugar art pieces.
Learn how to make all sorts of leaves: Assorted fall leaves, weeping willow leaves, rose leaves, tulip leaves, etc… Creating movement in a leaf is critical to creating a natural look to your finished piece.
Day Two · Roses Tea roses, ballerina roses, rosebuds, fully opened roses, & roses on the vine create the most stunning impact in arrangements. Learn everything there is to know about making gorgeous roses using Wildflowers techniques.
Gerbera daisies and garden daisies are a wonderful accent for ‘wild’ arrangements. Learn how to create them. · Morning Glories Climbing morning glories create a sense of drama to finished pieces. Learn how to create this simple flower & its buds.
Day Three
Learn how to make hand sculpted gorgeous, lifelike hydrangeas. · Lilacs Learn how to create hand sculpted lilac blossoms for the most exquisite presentations.
Create high impact blossoms using the lilac technique for wild flower arrangements & learn how to create apple blossoms. We will learn how to make jasmine, and stephanotis. Learn all about the power of the ‘bud’, the unopened flower, in your sugar art arrangements.
Day Four · Tulips Learn how to create hanging French tulips, parrot tulips, Darwin (Dutch) tulips.
These textural flowers add dimension and interest to an arrangement. Learn how to create this unusual flower.
Learn all about creating beautiful Calla lilies.
Gorgeous full sized garden lilies in several varieties. Rubrum, Casablanca, Tiger, & exotic lilies.
Day Five · Wiring Learn the various techniques used for wiring your flowers to create groupings of hydrangea blossoms, lilac blossoms, and wild flowers. We will also learn how to create different groupings of berries, as well as how to create branches of leaves, climbing morning glories, and how to wire a rose vine & a vine of ivy.
Learn the secret behind creating gorgeous, lifelike sugar flowers, leaves, berries, & fruits. Hand painting techniques are explored, taught & mastered by the student. Each student will paint and color their sugar creations.
Day Six · Making a Sugar Flower Topper Learn how to create a sugar flower topper for wedding & special occasion cakes. · How to Use Your Sugar Flowers Wildflowers is known for its approach towards creating realism with its use of sugar flowers. Learn the tips, techniques & secrets behind mounting sugar flowers into baskets and fabulous Limoges & hat boxes. Learn the in’s and out’s of decorating a cake with sugar flowers.
Learn the basics on weaving rolled fondant to create gorgeous rattan & wooden baskets. Creative ideas for decorating cakes using rolled fondant are explored: Painting fondant, brush embroidery techniques, sculpting fondant, and creating fondant vines and flowers for brocade cakes are explored.
Making ribbons and bows is an easy and fun way to add personality to your designs. Learn how to create them using easy techniques.

Tuition:
Tuition for the six day professional course of study is $2,500.00
Upon successful completion of the course you will receive a diploma.
Your tuition also entitles you to contact Chef Blethen at any time in the future for any questions you may have as you begin working with your sugar art.
What's Included with your tuition:
Your tuition includes your attendance in 6 days of total immersion in the study and mastery of Sugar Art.
You will be provided with everything you need including printed materials, working supplies such as gum paste, colors, etc... and your sculpting equipment.
When you graduate, you will be awarded with a diploma certifying that you have successfully completed this respected course of study.
